Makroudh Asmar


Ingredients- dough

  • 550g of fine semolina
  • 50 g of medium semolina
  • 450g flour
  • 250g olive oil
  • 250 ml of lukewarm water
  • Turmeric
  • Bicarbonate


Ingredients – stuffing

  • Dates (aliq)
  • Orange peel powder
  • Rosebuds
  • Cinnamon


Preparation of the stuffing:

- Mix dates, orange peel, rosebud, cinnamon
- Form a dough
- Add a little oil if necessary.

Preparation – dough:

Heat the oil and pour the mixture (fine semolina, medium semolina, flour, turmeric and bicarbonate) then work the dough with lukewarm water.

Then :

- Roll out the dough using a rolling pin to obtain a thickness of 0.5cm.

- Stuff with a small sausage 1 cm in diameter.

- Close and roll up.

- Form diamond shapes using a mold (qâleb).

- Fry over high then medium heat.

- Soak in sugar syrup then sprinkle with sesame seeds.
